You should change the spring rolls to "assembly only." From making spanikopita I know that you can freeze phyllo-made things before they are cooked and then cook them right from the freezer, adding 5-10 minutes to the cook time. Cooking them before freezing would probably make them fall apart. I will cook the halibut the day before assembly so we don't have problems with that.

If you pick which stuffed shells recipe you prefer, I will make a shopping list. Should I assume we are quadrupling each recipe?
